Chorizo and Canellini Bean Soup

Chorizo is a spicy Spanish sausage made with paprika and garlic and packed full of flavour. It’s great in casseroles and soups like this one.
Chorizo and Canellini Bean soup
Serves 2-4
Ingredients
1 chorizo sausage
1 tin of canallini beans
1 leek
1 onion
1 stick of celery
1 tin of tomatoes
500ml – 1 litre of Vegetable stock (depending on how thin or thick you want the soup)
Slice the chorizo into bite sized pieces and fry in a little olive oil for a few minutes. Remove from the pan.
Finely chop the vegetables then add them to the pan and fry until softened in the olive oil that will now be coloured and flavoured with the chorizo.
Put the chorizo back in the pan with the vegetables and add the tomatoes, beans and stock. Season well then bring to the boil and simmer until the soup thickens to the consistency you like.

I've been cooking regularly with chorizo recently, Julia. You've almost got there with this post when you say "fry until softened in the olive oil that will now be coloured and flavoured with the chorizo". But you've still made a chorizo and bean soup.
I've been going that step further and treating chorizo as a spice, rather than an ingredient. It's just a question of thinking about it differently. I decide to cook something that could benefit from the extra pungency, sweetness and umami. I chop the chorizo very finely and use it to supplement and enhance the flavours of my ingredients. Depending on the cooking method, the bits of chorizo may be removed from the final result.
Try this yourself with something that has good texture but weak flavour. It really works. Mind you, so does wrapping your choppers round some nice chunks of chorizo meat. And legumes make a perfect accompaniment.
That's interesting Trig, it's certainly flavoursome enough to use as a spice. I like the big chunks of sausage though!
My friend DD does something very similar to this only with chunks of potato rather than beans. I've been meaning to ask her for the recipe for ages, but now I don't need to - I'll make this instead, and give it to her (and then she'll be asking me for the recipe!)

I have been on a real chorizo kick recently following a holiday in Andalucia and made something very similar recently. It's not blogged yet to my shame. There's just isn't enough time to cook obsessively, blog & work at the moment ;-)
I also did a rice version which was really flavoursome.
Trig - I really like your idea about using it as a spice.
My partner is a HUGE chorizo fan and tends to add it to any vegetarian dish I cook for him! He'll love this soup.
The fat from the sausage makes amazingly smokey roast potatoes too.
