Roast Belly of Pork, Mashed Potato and Savoy Cabbage

I’m sitting here at the desk in my study looking out of the open window that overlooks the garden. It’s a beautiful morning and the trees in the gardens beyond ours are bathing in diluted sunshine. Every now and then they’re disturbed by the breeze blowing through them, like children running past dozing grandparents, and they shoo it away with their rustling. They’re starting to yellow at the edges but for now they’re more green than gold, as the weather this weekend is more late summer than autumn. But still, the telltale signs of are there, the most notable, aside from the turning of the leaves, being the early morning and late evening drop in the temperature.

Last night’s dinner was most definitely an autumnal one. It was the kind of warming, comforting meal that makes you welcome the change in season and the darker, longer nights with open arms. I slowly roasted a slab of pork belly in chicken stock and water with some root vegetables thrown in to flavour the pork and the liquid. To accompany it I steamed some Savoy cabbage and made buttery mashed potato to soak up the juices from the pan. It was late when we ate and the warm glow from the lamps that permeated the room, the dogs sleeping soundly in their beds, and the simple, honest food made me curl my toes with unadulterated pleasure. In that moment there were no worries and no cares; everything was right with the world.

I too had slow cooked pork belly with savoy cabbage, but a much different dish, Dong Po Pork.

I'm looking forward to autumnal dishes now that there's a nip in the air, but definitely sad to see summer go.

This dish is my idea of food heaven though I would have been tempted to stir fry the cabbage with some smoked lardons and a bit of cream - which is probably why I am 17 stone! Delicious nonetheless!

I've been meaning to make belly of pork since I saw Gordon Ramsay make it on the telly, this looks sooo delicious!

I think we all had the same idea. I was just thinking of dedicating a post about the change of season.

I didn't do slow roasted belly pork. I opted for a Steak and ale pie (Old Perculiar) with a very short shortcrust pastry made of butter and lard. I was gonna make a buttery mash,,but didn't have enough for four, so we had roast potatoes, honey/mustard glazed baby turnips and French beans.

I love cooking at this time of year.

Pork is definitely an autumn meat for me - we had Cumberland sausages and baked squash today, with garden runner beans. I will definitely try this recipe!

I love getting back to comforting autumnal dishes too. This looks perfect. I love pork belly though strangely, I don't think I've ever cooked it myself. Must see to that!

I'm still not feeling ready to welcome autumn yet, I think I am being too optimistic that a few summer days may still be out there somewhere. I will probably come down to earth with a bump soon!
