Pea and Pancetta Risotto

I was very encouraged by how you enjoyed my last video - thank you for all your lovely comments and emails - so I felt brave enough to do another one; in the kitchen this time! Unfortunately this hasn't come out so well - I'm disappointed by the quality of the video (I think I need a new camcorder) and I didn't zoom in for you to see what I was doing closely - but I hope you get the idea anyhow.
Pea and Pancetta Risotto
Ingredients
200g alborio rice
300g peas (weighed in their pods)
80g pancetta
1 shallot
A knob of butter
A splash of vermouth
1 ltr vegetable stock
A generous grating of parmesan cheese
Salt and black pepper
1. Heat the stock in a pan, ready to ladle into the risotto
2. Dice the pancetta and fry it in a dry pan over a medium heat until it’s cooked through. Remove it with a slotted spoon, leaving the fat that comes out it in the pan
3. Finely dice the shallot and add it to the pan, frying for a couple of minutes in the pancetta fat.
4. Add the rice and stir well, coating it in the fat, until it starts to turn translucent. Add a little butter if you need a little more fat.
5. Add the vermouth and stir for about 30 seconds while the alcohol sizzles and burns off.
6. Start adding the stock, one ladle-full at time, stirring continuously. Allow the rice to absorb each ladle-full before adding the next. Keep adding stock until the rice is ‘al-dente’, which means it isn’t totally soft all the way through but still has a bite in the middle, and the risotto has a sauce like consistency. Different rice absorbs different amounts of stock so you may need a little more or a little less. You can top up with water if you do need more.
7. Shell the peas and add them to the risotto along with the pancetta a few minutes before the end of the cooking time. Ensure the pancetta is heated through.
8. Take off the heat then season and stir in grated parmesan according to taste.

Luca - no, I work full time in IT, and cooking is so different to that, so I love to cook at home.
Irtiza - yes, I have a good friend who's Indian and he introduced me to some milder dishes as I find a lot too spicy for me.

Pinku - pancetta is just an Italian bacon, so any bacon would work fine.
looks great, i too am a keen cook; i am relitivly new to it all but it i get by. i will tell you what i love the most about cooking; the fact that whatever is going on, whatever train you got home (however late), however much you're in debt etc. it really doesnt matter; when you have a slice of beef or fish or pasta or anything you have the food not the crazy world but the food. GOD SAVE FOOD!

I'm loving the recipes that you're putting up here. The pictures are gogeous - lovely and bright.
I was hoping you might be able to offer a little advice/suggestions to me.
I'm reasonably competant in the kitchen (I studied in the hispitality area at University) but quite often my folder of recipes in my head fails me. I have to cooke a three course meal next weekend - we're having over a couple, one of whom is currently having chemotherapy. Because of this, I'd liek to cook somethign healthy, and light. Nothing rich. But I can't for the life of me think of a dessert. If you have ANY ideas at all, I'd be very very happy to hear them. Something light, not to rich, hopefulyl healthy! (And if you want to offer ideas on the other courses, I'd be willing to hear those too!)

How does poached pears in wine sound. I guess the wine might not be a good idea for your freind. I would also find it hard not to pour choc sauce and cream over this.

I know its very adventurous,,but somekind of fruit soufle.
This might be it,,,those melt in your mouth soft meringues that you cook in milk,,that might be perfect with some kind of fruit cooley.
On a day like this I am personaly feeling like a hot steamed sponge puddin of somekind.
You are a natural in front of the camera--I fully expect to see you on The Food Network someday. Your voice is soothing and such a pleasure to hear, especially to an American with an Oklahoma accent. :o) I want some of those peas!

I have been a but unwell today with a headache. Must have been cos I was up late making chicken stock. So I had some chicken soup and bread for dinner. followed by a long nap. Woke up and started making some risotto. Sadly the hot kitchen meant the headache came back. Finished the risotto, it is practically the same as yours julia, except I used white wine and added some mint at the last minute. The mint complemented the peas perectly. The good news is that my headache has gone.
So I can vouch for risotto with home made chicken stock as health food.
